The most nourishing mac n cheese, and so easy you'll be kicking yourself for making "the boxed stuff" for so long. Made with raw whole milk and heavy cream, rich bone broth, and raw cheese, this mac n cheese is the real deal.
Ingredients

2 cups chicken bone broth

1 cup raw whole milk

1 cup raw heavy cream

2 Tb salted butter from grass-fed dairy

½ tsp himalayan sea salt

¾ cup raw sharp cheddar cheese shredded

¾ cup Guyère cheese shredded
-
½ cup pecorino romano cheese finely shredded
-
¼ tsp paprika smoked or regular
-
12oz shell or elbow pasta we love these
Directions
Slowly bring broth, milk, cream, butter, and salt to a boil over medium/low heat in an enameled dutch oven or medium saucepan.
Add pasta and gently stir until the broth mixture returns to simmering.
Adjust heat to keep a slow, steady boil, stirring occasionally for 2 additional minutes than the pasta’s indicated cooking time (will vary slightly).
Turn off the heat and stir in cheeses and paprika.
Let stand, covered, for a few minutes and serve topped with fresh cracked black pepper!
Recipe Note
- Can use non-raw dairy, if preferred (although, we don't necessarily recommend that around here).
- Feel free to use any combination of cheeses, including replacing the Guyère cheese with sharp cheddar, etc.
- Slice up some grass-fed hot dogs and fry them up in an additional pan and mix them in for an extra boost of protein!
