One of the simplest ways to add more sustainability to your home cooking is to prepare whole chickens. It's much easier than you might think, and this simple method is the one the Bimber family uses on a weekly basis.

The easiest, juiciest way to cook a whole chicken. Don't forget to save all of your bones for making homemade bone broth!

Ingredients

1-2 whole pasture-raised chicken, thawed

salt and pepper, to taste
Directions
Preheat oven to 350 degrees F.
Place whole chicken (or two if you have a large enough dutch oven to fit them side by side) breast-side-down in a dutch oven and sprinkle with salt and pepper to taste.
Place lid on dutch oven and cook in preheated oven for 90 minutes.
After 90 minutes, remove lid and carefully turn whole chicken over with best attempt not to tear the skin.
Sprinkle with salt and pepper again and return to oven, uncovered and roast for an additional 30 minutes.
Remove from oven (check temperature if put in slightly frozen) and allow to cool enough to handle.
Pick apart the juicy, fall-apart meat and save the bones for broth. Use as desired!
